As I mentioned in my blog post yesterday, we have a lot of family get togethers to attend at Christmas and I always try to pick a recipe that I can make for most so that it cuts down on the cost and the prep time. Last year I came across a great salad recipe that I made for the get togethers that were based around a meal, and I really liked it so thought I would share! It is a great way to get in veggies during a time when the sweets are abundant and it looks festive as it is mainly white, green and red!
Marinated Veggie Salad with a Kick!
Ingredients:
- 1/2 lb of green beans, ends trimmed and cut in half
- 2 cups of cauliflower chopped bit size
- 1 cup of cherry tomatoes, halved
- 1 cup of canned chickpeas, drained and rinsed
- 1 cup of stuffed green olives, sliced
- 1/4 cup of sun dried tomatoes, thinly sliced
- 3/4 cup of sun dried tomato olive oil salad dressing (Kraft makes a good one that I use)
Directions:
- Cook green beans and cauliflower in hot water over the stove top until tender but still have a crisp to them. Drain and then rinse in cold water.
- Once completely drained, place in a large bowl.
- Add all the other ingredients into the bowl with the beans and cauliflower.
- Mix together thoroughly.
- Refrigerate at least 2 hours before serving.
- Enjoy!
